20 New Cafes In Singapore – Wake Up and Smell The Coffee!

My café hopping friends and I are compiling a list of new cafes in Singapore, and were startled at the sheer number of new openings just in 2014 alone. Here are 20 recent ones, and there are very very new.

For those planning to be café owners, 3 quick tips for you: Have a strong different theme to stand out from the local competition, and keep the theme running from the menu, décor to all finer details. Eggs ben alone isn’t going to save you. Not anymore.

The first two months are very crucial. This is when the media, bloggers and cafe hoppers would come searching for you. A foul-up and the name may be swept under the carpet. Be at least 90% ready even before you open. (I went to a new café and its ‘barista’ wasn’t sure how to prepare coffee. Would you go back again?)

Build your café identity early in the game. Never never never save on marketing. A facebook page alone doesn’t count. But at least there is something. If you start inviting the media 6 months after you are in the business, even though you still think it’s very new, chances of them featuring you prominently is close to nil.

While most of my posts are targeted at readers, here is my part of giving you – new café owners, the publicity that you may need. Presenting 20 new cafes in Singapore…

The Cafes Rise In The EAST

Coast & Company

This is bicycle shop, workshop, and café rolled into one – a collaboration between Coast Cycles and Papa Palheta. Coffee will remind you of Chye Seng Huat’s. Local celebrity chef Willin Low acts as food consultant, offering creations such as Beef Rendang Hotdog ($14), Almond Peanut Butter Toast ($7) and Green Curry Stew ($15). (Read Coast and Company)

NOM Bistro & Bakery – No Other Meaning

Opening Hours: 11:00 am – 11:00 pm

NOM is most known for their rainbow cake ($7.90). It is one of the prettiest and most photogenic around, coming with outer layers of chocolate, oreo or salted caramel. The sponge is moist and soft, probably better than half of the rainbow cakes out there. Very sweet. (NOM No Other Meaning)

Carvers & Co

A new bistro at Katong featuring meat dishes, sandwiches and craft coffee. Food is quite substantial here, from Chicken liver with red wine reduction, 63 degree egg and brioche to Bacon and Thyme roasted turkey.

Comestivel Desserts

If cakes are your thing, Comestivel (it means ‘edible’) does it differently – with strawberry balsamic basil and lychee rose scented Pavolova Rolls (already sound so good), peanut butter jelly cheesecakes, and kinder pies. The thing is, many of their signatures come in very limited quantity, so it is first come first serve.

Craftsmen Speciality Coffee

The retail arm of Dutch Colony Coffee Co, this café at Siglap V specialises in different types of brewing method from V-60, Chemex to Siphon.

Percolate

Percolate feels like an honest, unpretentious, cosy café, and certainly sets to bring more life to the Bedok neighbourhood. Try their Red Velvet Cake, that does not taste artificial, and interestingly taste fruity and feels slightly wet. (Read: Percolate)

Journey To The WEST

Miss Molly’s

Miss Molly’s at Tanjong Pagar puts a twists on favourite Singapore food classics, with home-styl Western cuisines and local favoured sandwiches. Expect “Har Jiong Gai Sandwich”, “Sambal Belachan Shrimp Pasta” and “Kiam Chye Aglio Olio”.

Two Loaves

More known for their cakes and pastries than coffee, this bakery café offers fresh loaf cakes, cheese cake, lava cakes, brownies, cookies and cinnamon rolls.

Curbside Cafe & Wine Bar

Curbside Cafe & Wine Bar joins in the One-North neighbourhood which makes this ‘ulu’ research and development district kind of cool. Their Red Velvet Cheesecake Brownie ($8) was awesome, the type of dessert that can single-handledly define a café and make people return for more. (Read: Curbside Café & Winebar)

Envy Coffee

For those seeking a respite away from office, Envy Coffee provides free WiFi and a few power points. Try their Smoked Duck Miso Spaghetti ($12.90 nett), handcrafted coffee and their signature mocktail Cloudy Twist series ($3.50 – $6.50 nett).

Brew Maison

This café, located opposite Singapore Chinese Girls Schools (teachers, parents know where to go for your caffeine) said to be inspired by both Japanese and Korean cafes, therefore the cutesy kawaii 3D animals (or Disney characters) on their drinks. 3D artist may not be in all the time, so check their facebook for updates. Other items on menu: Mix and match your rice, pasta, wraps and breads with different meats and sauces. (Read: Brew Maison)

Three Hands Coffee

Three Hands Coffee work on a joint-sharing arrangement with Taberna Wine Academy. The café opens from 9am till 5pm, while the wine company takes over after. The other meaning for Three Hands – it means one hand for coffee, one hand for pastries and one hand for wine. Oh, there are 3 owners. (Read: Three Hands Coffee)

The Café Hotspots Arab Street and Jalan Besar

7th Cylinder is all about – food, coffee and motorcycles! The cafe aims to provide a welcoming space for both bikers and café-goers. Their specialties include a Class 2A breakfast ($15.90) and Red Velvet Drink. Who says familiar red velvet can’t be a drink?

Rouse

Housed in a tall, dark grey three-storey shophouse, and one of the hottest new cafes at Jalan Besar, this has all the qualities of ‘hipster café’ ticked – industrial look, converted from electrical shop, cakes (from faithiscakes) and coffee (beans from Dutch Colony) and brunch items such as Beef Wrapped Asparagus on pumpkin mash with poached egg. Food is also halal.

Abite

aBite specialises in customised celebration cakes, home made whole cakes and tarts at affordable prices. Their signatures include Tofu Cheese Cake ($4.90/slice), Carrot Cake ($5.80/slice), Chocolate Cake ($5.50/slice) & Earl Grey Loaf ($3.50/slice).

Flee Away

Flee Away is both a café and ‘flee market’ shop. You can rent box displays to sell merchandises, and customers can shop around with a mini flee mart. Other than coffee, food consist of local traditional bites with a twist such as Beef Hash Pie Tee and “Le Char Kuey” Baguette.

Way Up North

Shrove Tuesday

There was Creamier, and now there is Shrove Tuesday at Toa Payoh. Waffle lovers will know where to head. Shrove Tuesday offer handcrafted gelatos, pastries, frozen desserts, and their signature waffles are the light and crispy kind. Coffee beans are organic and air flown from Italy.

Sunday Market

Sunday Market wants to be not merely a café but a lifestyle, with emphasis in selection of music. Their menu can be said to comprise of Asian style comfort food which are not quite the same as elsewhere. Expect Roasted Duck with Garlic Hoisin Crispy Eggs ($12.90), Sirloin Rendang Toast ($15.90) and Bangkok Toast ($10.90) served with Thai milk tea ice cream.

Back In Town

Dulce and Sucre

Dulce & Sucre by the Twelve Cupcake couple – Daniel Ong and Jaime Teo, can be said to be a dessert café. Opened at Orchard Gateway, it sells a variety of items such as puddings, crunchies, whoopies, parfaits, tarts, and granola cups. (Read: Dulce & Sucre (Orchard))

Belgaufre

Offering Belgian waffles, with choices of waffles: Liege, Brussels and American waffles. Wafflewiches are also available (cheesy ham, carbonara tuna and egg mayo) with sets at reasonably priced $6.90.

I may have left out some as I have limited resources. (Also apologies to owners who have extended their invitations, I do get multiple tastings per day and have to decline.)

Coast and Company – Papa Palheta Coffee Meets Bicycle Workshop

A friend said that the coffee of Coast and Company’s reminded her of Chye Seng Huat’s, or even better. It’s won’t be surprising as the café is a collaboration between Papa Palheta and cycle workshop retail Coast Cycles. (Read: 20 New Cafes In Singapore)

So this new café in east is café meets bike shop and workshop.

Bicycle café? While you may not get the Premium Rush type of guys (ie Joseph Gordon-Levitt) riding in, the vibes are laid-back, easy going, with a ‘natural’ industrial look. (Been seeing so many bicycles in different cafes!)

No typical café food (no eggs ben and waffle) here, as the menu is specially crafted by Wild Rocket’s Willin Low, who did this “out of friendship”. He made sure he did a good job out of it since quote-unquote – His name is on it.

For breakfast-type food, there are the Sour Cream Cheese Toast ($8), Almond Peanut Butter Toast ($7), and Coast Breakfast ($12) with scrambled eggs.

More filling portions would include localised Western food such as Beef Rendang Hotdog ($14), Green Curry Stew ($15) and Chapalang Salad ($15). ‘Chapalang’ (mixed) because there are cherry tomatoes, bak kwa, and sakura ebi added, drizzled with goma dressing.

Food wise, I thoroughly enjoyed the Almond Peanut Butter Toast ($7), with peanut butter hand-made and added with almonds for that extra crunch. It felt crunchy and real, healthier and not too sweet.

The Sour Cream Cheese version though, was slightly marred by burnt honey comb crumble.

Willin’s signature style is delivered through a not-too-spicy and juicy Beef Rendang Hotdog in a soft bun. I wondered about the chips though (the couch potato in me is guessing Honey Dijon), as it seem clashing with the overall taste.

Coast and Company probably makes one of the more promising recent cafe openings due to its attention to coffee, aesthetic values and food. With successes in Loysel’s Toy, Chye Seng Huat, looks like Papa Palheta can perform that café hat-trick.

Carvers & Co. – Hearty Roast Meats At East Coast

Christmas seems to come early at Carvers & Co. at East Coast Road, a new bistro-cafe which specializes in something quite different from the rest – roast meats.

The owners who are also behind One Man Coffee wanted customers to feel right at home, and the dining experience did feel like a heart-warming Thanksgiving dinner at parts.

The weekly rotation special menu features roasts such as Wagyu Beef served with Caramelized Onions and Garlic Confit, Thyme and Rosemary Turkey with a Cider Glaze, and Porketta with Crackling and Apple Chutney.

“I saw a chance to create a place where friends could go for a great, really down-to-earth meal made from simple, quality ingredients. I love the idea of seeing people passing plates back and forth, enjoying themselves and the conversation” said owner cum chef Sarah Lin.

The physical athletic Sarah who is also a yoga teacher, picked up her interest in cooking meats and hearty meals after a farm stay during a sabbatical in Southern Italy.

She injects her own style after cooking for house-parties and supper clubs for friends. This is seen in her signature Carver Plates ($25, available dinner 6-9:30pm), served with an assorted of juicy tasty meats of various roasts, gammon ham, sausages, served with caramelised onions and potato hash.

The entire plate, quite suitable for sharing, is restaurant-quality food yet feels home-cooked. I don’t mean it in a bad way. The presentation or some subtleness lacks the polish-ness, but every slice of meat is suitably a little charred at the sides, savoury tender, bursting with flavours.

Her strength in working with meats can also be tasted from the Parika Candied Bacon Chips ($6), like bacon served in a cup, but every strip tasting like soft ‘bak kwa’.

The Beer Battered Fish & Chips ($17.90) served with mint pea mash & sea salt, and vinegar was unfortunately ordinarily flat and uninspiring.

Many of the items are not found in the menu, designed and fitted into a book. Ask the service staff for recommendations and desserts, and they would rattle off something the kitchen can spin off.

Desserts then included Dark chocolate tart served with ginger nut and fresh cream ($12.90) and Seasonal Fruit Crumble. I had bananas and black Berry in the crumble served with Meiji vanilla ice cream ($9.90).

The desserts were homely decent fare, and the blend of sweet bananas and tangy berries worked well, though I thought the tiny dessert could have been at least a dollar or two off its menu price.

Coffees served at are brewed with beans roasted by Common Man Coffee Roasters. The food is homely and hardly disappointing. If you consider it a cafe, Carvers & Co. carves itself from the rest by its delicious homely meats.

Three Cups Coffee Co. – Hearty Sandwiches & Strong Coffee In The CBD

Three Cups Coffee Co., and there is already Three Hands Coffee and Threefold Café.

Not to be confused with the other two, Three Cups is a new café situated at the revamped One Raffles Place Level 4. Our CBD friends have one more good reason to cheer with more caffeine options.

And in some other research, three cups of coffee a day could keep diabetes away, and halve the risk of liver cancer. I digress.

Three Cups Coffee Co. is so named for three reasons. The place is the brainchild three persons – husband and wife team Michael and Sue, with their friend Alan.

They offer three types of coffee – an espresso Blend, Single Origin for espresso and Single Origin for pourovers. Coffee is even served in three ways – nude (pure espresso), with milk, chocolate or ice blend and pourover methods such as V60 Aeropress so that customers can enjoy coffee in different ways.

And the owners wanted the place to gather three special ‘ingredients’ of “Great coffee, d’lish food and great company”.

The team is no stranger to the café business, having helmed espressoLAB at Bali Lane (which I hear is ‘forced out’ due to rent increment). They partnered with a local micro roaster to custom roast the beans, with their current blend being a mix of Brazil Nossa Senhora De Fatima and Sumatran Aceh Tengah.

I feel that their coffee belongs to the type that is more intense – bitter, strong, slightly acidic, likely to cater to the CBD crowd which needs more kick in their drink.

Three Cup’s specialty includes sandwiches and wraps; with the most popular types being the Three’s A Company ($9.50), Reuben Rosemary Beef ($9.50) and Thyme Mushroom Cheese Wrap ($7.80).

Three’s A Company ($9.50) includes three ingredients that I enjoy – herb roasted chicken, mustard egg mayo and bacon all in a robust sandwich. The combination works well, providing a variety in textures and taste. Bread which is sourced from BAO (Bakery Artisan Original) was rustic in flavour and soft in texture, being a good compliment to the creation.

Food and cake options are currently quite limited, and I hope they find the right partners to source from. After all, competition is very strong downstairs in the basement. But if you want a relatively quieter spot from the hustle-bustle, Three Cups Coffee Co. at level four is not too far away.

Café hopping is the buzz word in Singapore’s food culture, with many hipsters during weekends scouting the latest best new cafes in town. Look no further, because here’s an entire recent list!

It was not too long ago I compiled 20 New Cafes in Singapore, and here’s more, some so new you probably haven’t heard about them, some a few months old but went under radar. (20 More, More New Cafes In Singapore – Hop Till You Drop!)

The good news for city dwellers, many are in the CBD, Chinatown and city central area. More are opening up in Biopolis, Expo and near the housing estates. Wherever they are, we are starting to see more distinct personalities, from the retro Tian Kee & Co, hip Aussie The Lokal and lifestyle café The Assembly Ground getting more attention.

Central, Chinatown, CBD

The Lokal is about wholesome Western style comfort food made from scratch using fresh ingredients, served up in a friendly chilled out atmosphere. Bread & Hearth

Bread & Hearth is helmed by a chef with more than a decade of experience in artisan baking. Handcrafted artisan bread is their bakery café’s signature style, where every bread and pastry is baked using traditional European methods. Try their Le Croissant ($2.80), Brioche ($2.80) and Chocolat Blanc ($2.80).

Farm to Table

Farm to Table Café is a pop-up café at the Duxton Hotel, located within a historic 19th century heritage site. It is only open till the end of this year, after which the entire hotel will undergo a major renovation. Coffee starts from $3.50 for an espresso, $5 for a Cappuccino, $5.50 for a Latte and is made from Nylon’s Four Chairs blend. Recommended is the Farmer’s Burger, a juicy grass-fed beef patty topped with bacon relish, tomato and cheddar, sandwiched in brioche buns ($18).

Helmed by the team behind the former espressoLAB, Three Cups is a new café situated at the revamped One Raffles Place Level 4. JAB Brewers

More like a takeaway kiosk at the basement of the revamped One Raffles Place, there are still some seats for you to enjoy their coffee – beans sourced from Toby’s Estate. The shop’s name is playfully inspired by a doctor friend, for CBD dwellers who need their jab of caffeine.

Coffeemin

Coffemin is a café different from the rest. The only thing you pay for it the time, and you can choose to work, read a book, play games, drink and eat as much as you want. The first hour is charged at S$6, and each subsequent 10 minutes block at S$1. Daily pricing is capped at S$30 regardless of the time you spend in a day.

Fish Tales Café

Fish Tales Café’s menu is seafood based, offering dishes such as Fish & Chips, Seafood, Pasta and Fish Burger. For something light, cakes, coffee and Italian sodas are available. There is not GST or service charge.

The Assembly Ground

Dolce Tokyo’s 2nd branch apart from 313@Somerset, they are known for their Japanese cakes and desserts such as the Dessert Bento ($18.90) where you can mix and match various desserts of panna cotta, gelato and cake of the day. They also serve Japanese inspired dishes, such as Omu Curry Rice which has fried rice wrapped in a gooey bright yellow egg, served with pork belly skewer.

Tian Kee & Co. was a 54 years old provision shop, situated in one of Singapore’s oldest estate Dakota Crescent, and has now been converted to a café with a nostalgic touch. For cake lovers, go for their Japanese Cupcake ($3.50), a soft and light chiffon cake where the spoon can go easily through, and a Yuan Yang Cheesecake ($6.50) made with both espresso and Hong Kong-styled milk tea. Ply Baked Goods is nestled amidst the serene neighbourhood off Soo Chow Walk (near Thomson Plaza) and was started in July 2012 as a bakery selling whole cakes and pastries for takeaway & delivery. It has recently converted part of its space to a 16-seat cafe, pending licensing approval, in response to popular demand for its whole cakes to be served in slices. Ply’s Rainbow Cake with Chocolate Crunchies is uniquely rose-flavoured, moist & sprinkled with crunchy chocolate pearls amidst the light layers.

The Tastemaker Store located at Havelock Road feels different from the other cafes in terms of vibes, very laid back. Food served is uncomplicated with a local twist, as they try to experiment with flavours and refine recipes we are already familiar with. Charlyn’s Milk Bar

On The Table is by the team behind the popular Lola’s Café at Kovan. The team loved the idea of a space like a family’s backyard that is big and cosy at the same time. Their signature item is The Ultimate Croissant ($13) – a buttery flaky warm croissant stuffed with melted cheese, honey glazed bacon, ham and silky scrambled eggs served with a side of refreshing salad. Coffee is brewed with beans from Jewel Café and Dutch Colony.

Not exactly a café, but I thought I should include this in. Tiong Hoe Specialty Coffee specialises in retailing of freshly roasted specialty coffee and raw coffee beans for home roasters. It is said to carry the heritage and legacy of Mr Tan Tiong Hoe, who has over 50 years of experience for coffee and coffee roasting. They offer roast on demand (Wild Kopi Luwak, Hawaii Kona Greenwell Farms, Wallenford Blue Mountain), freshly roasted coffee beans ($12-$19.50 a bag of 250g) and signature v60 hand-brew with more than 20 types of single origins (on a tipping basis).

Many will seek but not all shall find.” And finally… This weekend only café is supposed to be a secret. (But the beans have been spilled) The backyard of an office is turned into a café, and you have to enter via the back by knocking on the door. Limited seats, limited opening times, and limited bakes. I guess this is what true hipsters can really appreciate.

Flee Away – Fun & Friendly Flee Market Cafe at Dunlop

There are many surprise elements at Flee Away, a discrete café along Dunlop Street Jalan Besar, just a few shops away from the popular Rouse.

Flee Away is both a café and ‘flee market’ shop. You can rent box displays to sell merchandises, and customers can shop around with a mini flee mart. Other than coffee, food consists of local traditional bites with a twist such as Beef Hash Pie Tee and “Le Char Kuey” Baguette.

Once you open the door, you would notice two out-facing ‘cinema’ chairs, for customers to enjoy a coffee and literally watch the world go back. A live movie – that’s what they say.

There is a big toy aeroplane that hangs around the ceiling, a 50s television near the cashier, shelves peppered with old-school toys of Doreamon, toy soldiers and rubber duckies, lao fu zi comic books to browse, and an old poster of Wizard of Oz on the side wall.

This is a café which wants to be playful.

The foods I ordered were also ‘playful’. Flee Away prides themselves in their atypical “Le Char Kuey” ($12.50-$15.50), like a baguette but the sandwich is actually a specially customised you tiao doughstick which wraps ingredients such as coleslaw, chicken floss, chicken curry, egg mayo and tuna mayo. Add a side of papadum chips.

My Dry Laksa Le Char Kuey ($15.50) was not as oily as I expected, it was like eating a ham chin peng with fishcake, eggs and laksa sauce fillings. Hmm…. Innovative and interesting. But my personal take is this version may work better with a soft bun or wrap option, because the overall combination felt too heavy.

How about some Beef Hash Pie Tee ($12.50 for 6 pieces)? Instead of the usual bang kuang (fried turnip), this local twist comes with corned beef. I have a friend who loves this to bits, but I was one who would rather have the original version.

Desert was a Waffle with Gula Melaka Pudding ($8.5). The pudding made of sago seeds and drizzled over with palm sugar syrup replaces the usual ice cream. My suggestion is to have both, and coconut flavoured ice cream should work best.

There are many little reasons to love this café. Some ideas work, some may not, but at least they dare to try to be different. With too many cookie-cutters in the F&B scene, Flee Away is fun, friendly and fairly surprising.

Bread & Hearth – Artisan Breads Cafe At The Hip Keong Siak Street

The buzz words when it comes to food in Singapore lately – café, artisan, bakery, and Bread & Hearth has them all.

This confectionery café joins in the rest of other new places like Potato Head Folk to turn Keong Siak Street (which has none of its traces of being the former red-light district) into a very hip place.

Walking in, I couldn’t help comparing this artisan confectionery to Artisan Boulangerie Co, which signature feature is rows and rows of breads, tarts and pastries displayed under glass shelves.

“No, no, no… we are not like them,” the answer I got when I told them the ambience reminded me of ABC.

Their Le Croissant ($2.80) is evidently their signature, made with unbleached flour from France to produce the croissant dough (detrempe) used to laminate the fats (beurrage). Emphasis was placed on the lamination and folding technique to achieve the best honeycomb pockets within the croissant, in order to be “as European as possible”.

My verdict: There but not quite there yet. Definitely better the average brands, but without the oomph and flakiness of the buttery crust, that to me, defines a good croissant. Others may like an airy fluffy pastry, and Bread & Hearth’s version goes somewhere in the middle.

To give them credit, the small outfit sells a huge huge variety for its size, with choices from Croque Monsieur, Pain au Chocolat ($2.80), Cream Cheese Sesame ($2.80), Brioche ($2.80), Chocolat Blanc ($2.80), Almond Croissant ($3.50) to Fromage Twist ($3.00).

The team is helmed by a dedicated chef who has more than a decade of experience in artisan baking, and starts work as early as 4am to get the bakes freshly ready for the office crowd when the shop opens at 8am.

The Chocolat Tarte ($6.00) topped with a strawberry was surprisingly delicious, rich yet not overly cloying. Tarts base are made in-house from scratch. The texture doughy yet crumbly – may not warrant an immediate liking, needs time to grow on you, and I will still get one.

This familiar, but not so-familiar sense appears in the coffee – mid-robust, slightly acidic, quite nutty. (My fault Bread & Hearth, I should stop comparing you to the other cafes). You sense more sincerity when you learnt the coffee beans are also blended in house with Arabica and Robusta beans.

Breads, pies and pastries are baked in small batches in Bread & Hearth, rather than mass produced for your pick -me-ups. And it is opened early enough on weekdays, and even Sunday, which is what I appreciate. Honesty & sincerity is what it presents.

Sin Lee Foods – Cafe at Jalan Bukit Ho Swee Needs To Find An Edge

Many cafes are playing the nostalgia card; some get it, some are putting up an appearance.

Chye Seng Huat is the frontrunner, making almost everyone believing that it is a real name. Dispensary scores in décor, and that’s about it. Tian Kee & Co while lacking in the food component, makes up for it in soul.

Yes, soul. For a café, it’s really not just about coffee, food and service anymore, but marketing and soul – the feel of the place.

Sin Lee Foods is another café which joins the rank, converted from an old coffeeshop, located somewhere in Bt Ho Swee – an area more known for its Teochew restaurant and Hainanese curry rice. The only thing really nostalgic about it, is the estate and the former signboard it retained.

That’s fine. (But Sin Lee Foods, how come you don’t even have a FaceBook page? You need your marketing. Or are you doing a Whale & Cloud?)

Finding the café may be tough, at the bottom of Block 4 somewhere near the Singapore Examinations and Assessment Board. I see an occasional couple coming in armed navigating with google maps, already broken out in sweat, climbing up a short flight of steps.

In Singapore where café hopping is like the IN-thing, there are almost no other cafes to hop to (ie walk to) after this. Unless you count The Tastemaker Store about a 10 to 15 minutes walk away.

Food wise, there is the usual assortment breakfast in the form of Big B ($18.90, scrambled eggs, bacon, mushroom ragout, sausage, russet potatoes, salad, toast), Croissant Benedict ($16.90) and a more interestingly looking Shashuka ($17.90, Moroccan baked eggs with spicy tomato sauce).

Coffee beans used are from Papa Palheta’s Throwback blend. My drink was not bad.

The Umami Brioche ($16.90) turned out to be unexpectedly delicious (had too much ‘blah’ café food of late, that’s why). The egg was runny, restfully positioned on top of creamy mushroom ragout, all on toasted brioche of paper-thin crust with fluffy texture. Bacon could be less burnt.

I did wish the food was a few dollars cheaper, if the café wanted to warrant frequent repeat visits.

Sin Lee called their Fried Chicken & Waffles ($21.90) “The One & Only”. Again, I blinked my eyes a moment, at $21.90.

To be fair, the iron waffle base was so much better than many other cafes which try too hard to push another waffle item on their menu, perhaps because one of the co-owners owns a crepe shop.

This is what I would call “delicious grub food”. The deep fried chicken leg meat laid on top, all tender and moist, could feed two hungry men. If only it was less salty. And fortunately, the house slaw at the side helped ease out the greasiness.

Service was prompt and chirpy, food and coffee above the average. I just wonder if Sin Lee Foods could do better if they had the right location, the right timing (a month or two earlier), the right marketing, or the right soul.

More, more, more new cafes in Singapore! Cafe hop till you drop. After May’s posting on 20 new cafes, July’s entry on 25 more cafe hopping spots, the café culture is spreading almost like wildfire, and doesn’t seem to stop.

Do we have space for more? Perhaps. What I am seeing now are …
- Similar food appearing, think WAFFLES, fuss-free sandwiches, and more permutations with eggs ben. Egg bens are really getting boring.
- Same cakes supplied. Can be a good or bad thing. Good – you know what you are expecting, home bakers are getting some business; Bad, the lack of variety.
- New entries will find it a real big challenge to stand out from the rest.
- The ‘older’ new cafes (meaning 3-6 month) may find it hard to retain customers, because many just want to try the new next one out there.
- Off-springs from the successful ones, think Creamier, Wimbly Lu, Grub and Little Prince diversifying.

The ice cream with no preservatives, no gum, no stabilizers, and less sugars used. Therefore, Seriously Ice Cream look ‘uglier’ the usual round creamy scoops. During my visit, interesting favours on display included Miso Gula Melaka, Strawberry Basil, Orange Crush, Strawberry Cheese, Yuzu Marmalade, to more localised Onde Onde, Horlicks and Teh C. Coffee is not their greatest strength. Well, there is always Nylon a few steps away.

The owner has been a fan of this Classic Story, and eventually named his café after his favourite book. The shop also displays the books in the cafe and the creamery for customers to read and understand the concept of the cafe better. Look out for the hand-drawn comics which make the interior look more homely. Homemade scones ($2.30 per piece), quiche ($7.90 for set) and waffle ($6.50 with ice cream) are available. Try the Noir, it’s very dark chocolate.

Located along Rangoon Road, Old Hen Coffee Bar is a specialty coffee shop which sits on the quieter side of the busy Farrer Park district. Coffee ($4 for 3oz white, long black, $5 for mocha) is bright and intense, a fairly decent cup, with beans used from Oriole’s Yellow Bird blend. Let’s wait for them to get a full menu ready. FIX – Poolside Cafe with Naanwiches & Liu Sha Donuts

FIX is an alfresco poolside cafe located in HomeTeamNS-JOM club in Balestier. Started by the team who own Grub in Bishan Park, this workshop-style cafe is built on the premise of ‘Original Homemade Goods’, featuring cakes, coffee, milkshakes and some savoury items made in-house daily.

From the name to its décor, we can see a rather ‘guyish’ viewpoint – which features one-of-a-kind furniture handmade from paint cans, wood panels and metal pipes. And there is a motorbike (real one) parked at the side.

So many new cafes in Singapore. (Read: 20 More New Cafes In Singapore). At least FIX tries to serve something different – Naanwiches. Being the owners of Cookyn Inc, guess they have a reputation to upkeep.

Flavours are Asian-inspired and not the usual run-of-the-mill, such as Beef & Kimchi, Chicken Tikka, Smoked Turkey Ham & Cheese, and Mushroom Feta (all $10, net price). I wanted to order the Korean Naanwich, but it wasn’t my destiny. Not available.

The Chicken Tikka was not bad, but wished the naan wrap wasn’t that dry and tough. “Microwaved ah?” (I might have asked that with a disappointed look.) The question was met with an embarrassing-sounding “Yes”.

Who would know the very next day, co-owner Amanda wrote me an email, “We have improved! We are now making the naanwiches fresh ala minute.” They really take customer feedback seriously.

We liked some of their savouries, such as the 3-Cheese Penne Gratin ($10), but pun-intended, they would require a trickle of FIXing. The cakes and pastries fared much much better.

They hit my weak spot with Liu Sha Donuts ($6). The mini, not-too-sweet fluffy donuts are served in a box of 6, with a dipping sauce at the side made with salted egg yolk custard. So clever. (If FIX can find a way to inject the Liu Sha in the donuts, it will be a sold-out.)

Strawberry Pistachio Rose Tart ($7) – pretty, a little dry though; Passionfruit, mango and coconut chiffon cake ($7) – smooth; Cacao Barry Chococolate Truffle Cake ($7) – rich and good; Twice-baked Sourcream Cheesecake ($7) – light, I like. Butterscotch Arabica Choux ($6) – The Winner!

With a pool-side view, friendly service, and yummy cakes, FIX is one of the cafes which stands out from the rest. Good news for our Muslim friends, they are applying for Halal-certification. Look out for updates.

Whisk – New Bakery Café Joins The Tiong Bahru Enclave

Another café Whisk joins in the Tiong Bahru enclave, already cluttered with many cafes big and small – from 40 Hands, Flock Cafe, PoTeaTo, Drips to Tiong Bahru Bakery.

The new bakery café takes over the space left vacant by Hong Kong Jin Tian Eating House, forced to close shop after a rental hike to $12k per month.

One can imagine the amount of rent Whisk is paying, so this new café definitely requires support.

The clean white stylish interior would appeal to many, with a view of shophouses and a slice of nostalgic Tiong Bahru outside. Coffee is brewed using a blend from Stranger’s Reunion – not bad.

Owner cum baker Tricia graduated from New York International Culinary Centre, and was fortunate to have interned at Dominique Ansel’s bakery (which created the Cronut). Her friendly mother Judy came to talk to me and mentioned how proud she was of her daughter who went all out for her passion since young.

Talking about that, this café unexpectedly has a moderately ‘family feel’, with different job roles from cashier to service staff undertaken by various members of the household. Judy added, “Very hard to hire workers nowadays.”

One random visit close to midnight, I still see the mum serving cakes. (This is indeed the love of a parent.)

Therefore, be further patient with Whisk as they are still getting a hang of things. I could visibly see the trembling of a cup as it gets served, the macarons on my dish were imperfectly cracked on the sides.

The macarons ($2.50) though, weren’t that bad on its taste, with crisp shells and chewy interior.

My favourite item at the moment was the Lemon Tart ($5) which had a fresh and smooth tangy twang, and managed to strike a balance while achieving that brief frisson in sensation.

Mum aggressively promoted the Carrot Cake ($7), that item that got relatives to sing praises of her daughter’s baking skills. Thus, the special attachment. Moist and with pineapples bits. Though sorry auntie, I thought the slice was too sweet for me, and I had better ones before.

I much preferred the New York style Cheese Cake ($7) – smooth authentic tasting yet not overly rich.

Whisk’s cakes and pastries are not too bad, the passion behind it admirable considering it is family-run, and you sense the people serving you are nice and sincere.

What they would need to do more than to sell the usual run-on-the-mill items. A reminder that other cafes with prominent branding, though not necessary better food, are just steps away.

Of all the recent cafes I went to, I am confident enough to say Gastrosmith’s food and service left a deep impression, in a positive way. It is a takeoff from its previous establishment The Humble Loaf – in which the place became too small to accommodate all their regular guests. Their cuisine is derived from the various gastronomic experiences they had from different cultures and countries. Signature items include the Hokubee Ribeye Bowl with 200g hokubee ribeye, furikake rice, and option of 63 degree egg.

The Bridge, so named because it is between North and South Bridge Roads, is a Modern European Restaurant, café and bar. Its Value Lunch Set ($16.90) is indeed value for money, with a soup or casear salad, main and drink. I was impressed with its Beef Cheek Stew and Fish & Chip. The menu and price looks promising enough for a return visit.

Upon entering the café, the bright multiple colours of yellow, pink and green pop at you. De’pop Culture is a pop-art theme café located at North Bridge Road near Arab Street. It serves fresh in-house baked desserts and comfort food such as De’Pop Breakfast Platter ($18.90 for one, $28.90 for two), Crab and the Dog ($15.90), French Toast feat. Banana-tella ($11.90). Their batter and sauces are made from scratch.

This is a café where food means serious business. JBM is another new dining place for CBD folks, located at the newly revamped One Raffles Place Mall. They boast for a wholesome menu which reflects touches of rustic French and Italian fare, prepared by Chef Chamara Fonseka (previously from Au Petit Salut and Covelli). Latte art is beautiful, because coffee creations are under the purveyance of barista Shaw Shyne Wei (Shawn) whose came in first runner up at Singapore’s National Latte Art Championship 2014.

Kki has found a new home at School of the Arts SOTA with a bigger space, and extended concept to sell home accessories. Their cakes did not disappoint. Still so wonderful, and I found new favourites. The Formage Melon ($8.80), a cheese mousse cake with melon coulis was airy-light and smooth-delicate, as though as I was eating a slice of dream. Time Table Café? This reminds me of school. The internet café at Upper Changi Road serves an interesting Chocolate Cookies Latter ($6.20) and some basic savouries such as Mushroom Spaghetti ($8.80), Pizzas ($10.80), Grilled Salad ($6.50) and Seafood Lasagne ($6.80).

Finally, something different, and something I always imagined – traditional coffee and toast served in a ‘Western’ style indie café. The kaya toast ($2) is almost the same as Yakun’s, except that the filling is very much sweeter. Coffee is blended with both Arabica & Robusta beans. My advice is to ask for ‘siu dai’ when possible. Salads, soups, wraps, pancakes, and cakes are also available. Next door neighbour with Old Hen Coffee Bar (Rangoon Road), and La’coffee got a very auspicious unit number.

If you were thinking it gets easier (foe me), actually, it doesn’t. My recent visits and research had more ‘mishaps’ – ovens not working, insufficient kitchen staff, coffee machine not calibrated properly, spaces not cleaned, closed cafes (not updated in facebook), and less responsive to emails. Not all of course, some.

As I am writing this, I know of at least 5 more cafes undergoing renovations. Main advice is: Open when you are ready. All the best guys!

Bridge Café – Café Bar Along Seah Street With Value For Money Sets

There are many reasons why you can like The Bridge Café, which can be seen as a modern restaurant and bar too. Value for money food, lovely environment, and personable service.

Seated on Seah Street, having a near view of the iconic Raffles Hotel opposite, makes the seats near the door more amiable. It is so named because it is between North and South Bridge Roads.

I do like this place, otherwise I won’t return twice. Though the Bridge Café had not quite found its footing yet.

There was a typical bicycle outside the café, which is hipster for the first, mainstream for the 37th. A banner that read Bridge Café faced in, good for walk-in-traffic, not so for potential customers walkng along Raffles Hotel.

Wanting to find out more about the café, I wrote in, but didn’t exactly get a reply because “the café was still soft launch”. (To other new cafes reading this, a soft launch IS a launch. Surely you should have a 2-liner branding description or menu somewhere.) I digress.

Lunch sets when I visited were office-worker-friendly, $16.90 for a value lunch with a soup or salad, main and drink; and an executive lunch was at $26.90 with choice of a more premium main plus dessert of the day.

The Beef Cheek Stew and Fish & Chip were beyond the regular Singapore café standard, certainly value-for-money. Beef was fork tender soaked a rich seductive brown sauce over soft mashed potato, while the fresh seabass was crisply deep fried in a fluffy batter, all in an appropriate-sized portion.

Grilled Codfish from the higher priced set ($26 ala carte), was served with spaghetti squash and peashoot. Okay, it did remind me (in a good way) of a similar grilled cod during a wedding dinner at a hotel, plating, taste and all. That is to show their food can be almost hotel standard.

There were some hiccups when we visited: place not opened during the time it was supposed to, oven didn’t work thus we got a smoothie for dessert… and cups we drank from the night earlier were still somewhere in sight. BUT, service recovery was quick, and we still return because we believed in the place.

Being the only café, and a price-friendly restaurant along the stretch gave Bridge Café the slight advantage. And it happened to be cheaper than an equally new SELA (which also seems like it needs publicity) just next door.

Its neighbour could serve as a reminder that new openings are in fact dime in a dozen, and Bridge Café would need that one or two signature foods, and strong branding to even let people hear about it.

La’coffee – Traditional Toast & Kopi In An Indie Café

Finally, something different, and something I always imagined, La’coffee (which sounds like la kopi in Hokkien) serves traditional coffee and toast in a ‘Western’ style indie café.

If you have tried their Kaya Loti ($3.50), you would find it suspiciously similar to what Yakun is offering – the thin, brown, crispy bread. Apparently, the current owner is the daughter of a consultant to Yakun.

The difference between the two was less than apparent, though La’coffee’s kaya was sweeter and offers options of otah and egg mayo.

Here’s my gripe: Initially, I thought that the price point and vibes made it a worthwhile place to visit, toast was at $2.00, eggs $150, egg mayo toast $3.00. In a manner of less than two weeks, the prices were ‘tweaked’ to $3.50, $2.50 and $4.50. Pretty significant increase. (I hope it is not because of the rental of an auspicious unit number.)

A Kopi was priced at $3.50 and Cold Kopi $4.00. The presentation was also changed from an aesthetically better looking wooden board to an aluminium plate.

Any new cafes in Singapore would get an initial publicity and weekend crowd due to novelty. The question is: what would make customers venture for a visit to La’coffee over Yakun when the hype dies down?

Maybe it was my luck, or perhaps their luck. The first (anonymous) visit, I needed to wait 20 minutes for eggs, in which I decided not to, because I always liked them together with toast, and not separate.

My next (also anonymous) visit, the Chicken Wings ($10) which many lauded could only arrive 20 minutes after I was done with my meal. Several of the other signature items were not available. Also there was a smell of burning in the air, which the table beside me remarked “must be our wings chao tah”.

La’coffee ambience, sincerity in serving and taste of their coffee were not too bad (though still need some fine-tuning), and looked like the need to get everything quickly together, could be their weakest link.

There are many great “best cafes” blog entries out there (Joey Asher’s one of them), so this would focus on just new openings. Part of the reason why I am doing this is because many new cafes have close to nil marketing experiences and social media exposure, so I hope this helps our budding ‘cafepreneurs’. I have included some which started operations from last quarter of 2013, the cafes I featured in June, July, August, September and some which are still undergoing renovations – we shall wait in anticipation.

Two Men Bagel House – Two Cute Boys & Many Delicious Bagels

Many “Two”s in Singapore. Two Chefs, Two Wings, Two Blur Guys, Two Face, Two Fat Men, Two Am Dessert Bar, and now a Two Men Bagel House.

A bagel style cafe in Singapore. How, can survive? I remember years ago bagels were quite IN (you may be too young to remember), but they came and left like the wind.

The two men – buddies pals Jerome Lam and Jereborne Lam who were break-dancing friends since teenagers, saw the bagel craze in other countries and believed it would take off in Singapore.

Jerome, who is Shatec-trained and previously worked at Les Amis and Pollen, experimented and refined the recipe since last year. Jereborne is likely to be the more media-saavy guy who went in an Aussie twang “How ya doing?” as customers walk past.

The owners feel that there is a gap and barrier as bagel is not a common item here, and some locals may not even know how to pronounce the word bagel correctly. (It’s ‘bay-gle’ by the way).

For those unaware, a bagel is a bread product, first boiled and then baked, resulting in a dense, chewy, doughy interior, with a donut-like exterior.

The freshly baked variety at Two Men include Plain Bagel with Cream Cheese ($3.60), Plain Bagel with Clover Honey ($4.90), and some savouries like the Rodeo with roasted beef, caramelised onions, and greens ($12.90).

Oriole Coffee is served, though they only offer Long Black ($4.00) and Flat White ($5.00).

The Lox ($11.90) was a delicious choice – crispy crusted bagel with chewy doughy texture, topped with smoked salmon (not too salty, light cream cheese capers and onions. Part of this feels like a burger, except with a much healthier slant.

Many cafes serve soup as a ‘by the way’ product, and I wasn’t expecting much here. But the bowl of Smoked Tomatoes with Mozzarella Pesto ($3.90) almost blew us away with its fresh simplicity.

The challenges now would be to get bagels noted again by customers, and for people to actually find this place. It is at a spot of Icon Village’s extension that would require some finding.

May bagels regain its glory again, and you may prefer them over a donut.

Fluffy White Cloud – Possibly Singapore’s Smallest Cafe. And They Sell Tokyobay

Is Fluffy White Cloud the smallest café in Singapore? Can possibly qualify to be. The hole in the wall shop has just two seats inside and a few more outside, and is indeed an intimate space. A pair of lovebirds can fill up the shop.

Fluffy White Cloud Cafe is located Thomson V Two, serving coffee and home baked cakes, such as “Fluffy Gold Bar” Semolina Cake and old school “Lets Go Bananas” Banana Cakes ($3.50-$4 per slice).

Pound cakes seem to be the signature here, with varieties of Lemon Lavender, Milk Chocolate Passion, Earl Grey Citrus Cake, Hazelnut Vanilla, and a recent new addition – Thai Tea Cake. Mostly sourced from Kreme Couture, and can be on the sweet side.

Of course my friend had a slight laugh (or bewilderment) when we were told, “You are lucky. Our cakes are very fresh. They just came in yesterday…”

The café can be ‘dangerous’ for me to go as they also carry Tokyobay watches and accessories on sale. Fell in love with a piece, but decided to resist the temptation and keep my $280 safe in the wallet first.

20, Make That 50 New Cafes In Singapore – November’s Edition

New cafes opening in Singapore, and the café hopping culture (or should I call it craze) continues.

After a mega post on 150 New Cafes In Singapore 2014, I took a short break (because I am missing my hawker and Asian foods), and returned to compiling a new list for November.

The shock on the discovery of many many more new cafes (and this includes non-coffee selling bakeries and soft serves shops).

On one hand, I am happy to see new entrepreneurs reaching out for their dreams. On the other, many promising cafes opened earlier in the year are facing the situation of being ‘old’, seldom re-visited because there are just too many choices. Some have already closed for good, quietly.

Presenting 20 new cafes for Oct/Nov, and a list of 30 plus more that recently opened. If you do like a cafe, do re-visit them often.

CBD – Raffles Place, Tanjong Pagar

The team at Pantler describes themselves as “extremely quality-minded”, featuring freshly baked
bread, cakes, pastries, tarts, puddings and baked desserts created with carefully selected ingredients, such as flour from Japan, butter from France, and seasonal fruits. Their line-up of signature products include the Pantler Roll Cake ($20 and above), Ricotta Cheese Tart ($8.50), Crème Caramel Pudding ($5.80), and daily danishes such as Croissants ($3). T.AKADEMI was known for their Lavender Collagen Tea ($4.90) and CupShakes ($5.90). (Their coffee machine was down when I visited). They have diversified to include Lady a Cupcake, known for their Japanese inspired “A” – sakurA cupcake ($4) with Collagen and Sakura flower infused cream cheese frosting, and Furano Lavender – Madagascar Bourbon Pure Vanilla cupcake with Lavender cream cheese frosting. Good for office tea-time snacks.

MediaCorp actresses Felicia China and Sora Ma are owners of The Mama Shop. So don’t be surprised if you spot one of them serving your Ipoh coffee and slushies. The retro-themed snack bar is slightly ulu, located in one of Singapore’s heritage buildings – the Old Police Operational Headquarters at Pearl’s Hill Terrace. They recommended the Messy Messy Nice Nice Mama Burger ($10.90), a bit of a mouthful.

Items on the menu were inspired from traditional recipes and ingredients, then given a modern perspective. There were Crispy Fries with Salted Egg Yolk dip ($7.60), Umami Babi ($8.50) where slow braised pulled pork collar were stuffed in mini mantous, capellini with buah keluak sauce called the Asian Truffle ($14.80) and Wonderffle ($9.50) – waffle with lemongrass and pandan ice cream drizzled with gula melaka. Founded in 1933 in Karuizawa Japan, Asanoya famous for its rustic Japanese-style bread has opened a bakery café at Wilby Central. Some signature baked products include the Fruits Rye which is a mixture of fragrant orange peel, rum infused raisins, lightly crushed walnuts and almonds mixed into a delicate rye bread, and a delicate Tea Bread made by mixing fragrant Earl Grey tea leaves with sweetened milk.

If you are the type who finds the standard round waffles too big and filling for an after meal dessert, Rabbit Owl Depot’s Snow Flake Waffle ($6.50, $9.50 with ice cream) could win your heart over. Twenty Grammes

Twenty Grammes is the ideal weight of coffee grounds to pull a good espresso shot, and also the name of a new Ice Cream Waffles Café at North Bridge Road. Their service is earnest, very friendly, and the café offers some many flavours of ice cream, such as Rum n Raisin, Honey-Scotch, Cookies & Cream, Vanilla, Walnut Butterscotch, Strawberry, and Triple Chocolate. Hyde & Co situated along North Bridge Road in the vibrant Kampung Glam precinct is very English. Their signature item is Crumpets, a mix between and English muffin and a sponge cake. Two Bakers is actually a bakery café owned by 3 girl friends. Their bakes were quite appealing, with signatures being Carrot Cake, Key Lime Tart ($6.80), Salted Caramel Éclair ($5.00) and Profiteroles ($5.00). Pick Me Up Café has the usual café setting, less hipster, slanted towards more mass and family oriented. Its differentiating factor is the sale of home-made yogurt gelato from Yogurt Story ($4.50 for single, $7.50 for double) and cold pressed juices ($8.90), other than all day breakfast, sandwiches and coffee. Oh, Alfero closed. This family-owned muffin café took over, which also sells freshly handmade pralines, chocolates and cookies. Muffins were fluffy and not too sweet, reasonably priced, averaging at $2.

The name “Bucktile St” is an anagram of Bucket List. There is a small corner of this café which encourages customers to share their bucket list. Coffee is from Toby’s Estate, and they serve the usual cakes, waffles, ice cream, tiramisu, side dishes and a more special blue velvet cake. Space for selling produces is available.

Pacamara Boutique Coffee Roasters at Upper Thomson appears to be a beautiful marriage between Oz Specialty Coffee and Thailand’s Pacamara Coffee. The new “Oz Speciality” café has such a clinical meet science lab interior, complete with white-washed walls and baristas in neat white long-sleeved shirts. Red velvet pancakes anyone? The Return Cafe Bistro – Sarang Café Returns At Bussorah Street

Just a stone throw away from Masjid Sultan, this 2-years-old Halal establishment undergoes a complete revamp and is now known as The Return Cafe Bistro. Being a veteran player in that area, it is no stranger to the Muslim community that populates there.

Besides changing its name, additions were made to the menu and they promised a seasonal special dish that will change every 3 to 4 months. A monthly-special set meal will cost $19.90 which includes a main dish, a soup-of-the-month and a soft drink.

Being the dish-of-the-month, the Glaced Supreme Chicken ($17.90) did not seem that supreme afterall. With a slightly crispy and flavourful skin, the meat was… a tad too dry. Mashed potatoes was creamy and just right.

Looks like the Wild Mushroom Soup ($8.90) had stolen the limelight from main dish with its thick and creamy texture.

Their coffee ($4.90 for latte) was decent, but wait… what happened to the latte art?

Oh did I mention that their service was awesome? Not only did the barista explain that he tried 5 times to make that latte, he even advised me to seek permission from the cafe owner before taking photos of the food. That was showing some real concern indeed!

Pan fried Norwegian Salmon ($19.90) drizzled with mustard chive sauce was tender and juicy and the tinge of freshness was pretty distinct.

The Zesty Buffalo Wings ($12.90) with homemade thai sauce and chilli powder was sweet and tender, not the usual spicy buffalo wings elsewhere.

If The Return Cafe Bistro wants to rebrand themselves, they will probably need to solve the issues of houseflies that will photobomb while you are trying to take a picture of your food.

And don’t forget, they do charge a 10% service charge for their awesome service.

The Lab SG – Experimental Cafe Surprises

Since the emergence of I Am… Café and Fluff bakery, we are starting to see a trend of more Halal cafes establishing near the Masjid Sultan area.

Then came The Lab SG. This week-old Muslin owned café have replaced the defunct 7th Cylinder and hopped on the bandwagon in the vicinity. (Read: The Return Cafe Bistro at Bussorah Street)

Do not be surprised if you find yourself walking into an underground lab, with multiple metallic sewage pipes sprawling across the walls and huge jars of chemicals (I mean fruit juices) hanging above the counter.

Their unusual-looking De La Huerta ($12.90), meaning a large garden in Spanish, came in a large mutated structure that stood 20cm tall. We cut up this gigantic bell pepper and found mushroom gratin oozing out it.

Here, the owner was very enthusiastic about trying out new stuff and experimenting it. Just like an oversized plant in Jack and the Beansprout, this mutation was a result of The Lab Experiment.

The Lab’s Conconction ($6) offered a selection of 4 – 5 drinks daily, with a mixture of fruits and teas. If you are up for a challenge, head over to the counter and make your own conconction. Unleash your creativity and you may be in for a big surprise!

For those who are frequent visitors to Johor Bahru (JB), The Lab SG have collaborated with Chaiwalla & Co. from JB and will start serving their tea leaves from mid Dec onwards.

On the starter menu, the Terefrank Buffalo Wings ($8.90) came in 3 different levels of spiciness (Yek Eleh, Mild, Wild) and 2 different dips (Lychee sweet chilli, Blue cheese) to go with.

Having tried the Mild spiciness, I would definitely go for the Wild level the next time round for an added fiery punch. The Blue Cheese dip was mixed with mayonnaise, giving it a creamy taste that complimented well with the wings.

The Heisenberger ($12.90) had a 6oz patty and bacon strips, topped with grilled onion and melted blue cheese, with sweet potato fries as a side.

The patty was flavourful, probably a bit too much salt, perhaps the result of a failed experiment?

Condiments such as pepper and salt, stored in light bulbs and sugar syrup, could be found in dropper bottles. Add them at your own risk, afterall, it was just an experiment.

The Lab SG is definitely a fun and interesting place to hang out and the staffs are definitely friendly in this cosy setting. If you are up for the challenge, let the experiment begins!
